Windy Enchiladas! Uhhh...?

Yesterday David and I went on a hike.

Yeah, my hair says "it was really windy!"
David still looks super good, though. Which is a bonus, since he's the one I get to look at all day. :)
I know we're blocking the view in this one, so here's a picture of that too:


I often forget that, if you go to the right places, you can find trees in Utah. This hike helped with my spiteful, begrudging relationship with the state that I live in.

For dinner I made these delicious chicken enchiladas with random ingredients from my college fridge.


I was almost expecting for them to taste nasty, but they weren't!
Here's what I used:
3 tortillas
1 cup of chicken, cooked
4 oz of sour cream
1/2 cup of milk
3/4 cup of cheese
1/3 of rice, cooked
1/4 of flour
1/2 a small onion

I mixed together the sour cream, milk, chicken, rice, flour, onion, and an 1/4 cup of cheese.
Fill each of the tortillas, and place them in a buttered bread pan, side by side.
Put the rest of the filling on top of the enchiladas, and top them with the remaining cheese.
Place in the oven at 350 degrees for 10 minutes.
Remember  to add plenty of salt and pepper!

Insta-Life (Tid Bits)




Ok guys, you got me, I totally sucked this week. I will take whatever punishment you feel is necessary.
I'm gonna cheat for this post and do an Insta-Life post, cause I haven't processed any of my photos from Seattle. I'd say I've been busy, but I'd be lying. The proper term would be lazy.
ANYWAY...
This week was my first week riding the bus to work everyday. It really wasn't that bad, because on Tuesday my roommate told me there was an old bike in the basement that I could have. It only takes me 7 minutes to get the the train instead of 20!
I also got to go horseback riding and take Milo for a walk. My favorite Insta-photo of the week is the one in the lower right corner.

First of all, I have been looking for some cute, affordable sandals for weeks.
I found these at PacSun for $12, and I love them!
I also like that my toes are all pretty, and I have a cute new toe ring.
It's just a pretty picture. =)

 Temperatures in the low to mid-sixties through out the weekend, with a light breeze coming in from the southwest. The partial clouds will provide perfect lighting for the wedding on Saturday morning, and 
Morgan is sure to have the time of her life

I'm pretty sure there are no words for how excited I am for this trip. I've had an anxious stomach for the past 3 days, and now it is finally here. I have to be up in 6 hours to go to the airport, so naturally I am writing a blog post instead of packing. Yes, call me the biggest procrastinator ever. So for this post, I'm going to give you a run down of what I'm packing. WOOO!

 This mint t-shirt is probably my favorite clothing item right now. So versatile! The color is chic, but the style is casual. I can wear it with anything. 

And, of course, no girl can leave state without her comfiest sweats and a hoodie!

I feel like such a good packer. I fit all of that, plus cosmetics, under-clothing, and 4 pairs of shoes in one duffelbag with room. *proud grin*

Fun fact: Did you know that if you roll your outfits into little cylinders instead of folding them it saves mucho room in your bag? True story.

I will (hopefully) have plenty of time to keep you very posted on my whereabouts and whatnots.

I've been working at the front desk for this office for 6 months now, and I finally have a name plate. Now everyone who visits my lovely desk will know just who I am.

Boys, Ballet, and Pupppppies!!! {Cup 1/2 Full}


This is me on Friday night. I was headed to visit a couple cute boys. ;P

The nicest thing about the texture of my hair, is that I can wear it wavy or straight, depending on how much of a hurry I'm in. (It's faster to wear it wavy.) All I have to do is put it into a few twists on my head, blow dry, let out the twists, gel, and voila! Fabulousity.

The first boy I went to see
was this little cutie. His name is Milo.

A couple months ago, I put in an adoption form with the Utah Sheltie Rescue. The owner, Barbara Edelberg, contacted me last Sunday, and said that she thought she might have a dog for me, so on Friday I drove to meet him!
SWEETEST PUPPY EVER!
When I arrived, I went to the back yard, and he didn't bark at me, or jump on me. He was very polite. Friendly, but reserved. Once I had some chicken meat in my hand, he came over and let me pet him and play with him. Turns out he knows how to sit, lay down, and come, which will make training really easy. The only concern is that his back leg seems to bother him ever ten minutes or so, but the rescue is having that x-rayed. :) I really like him, and I hope I can adopt him!

People who know me, or follow my blog know that the other boy I went to see on Friday was obviously David. Who also has an irresistible face, but isn't quite as hairy. :)

On Saturday, my little sister performed in the ballet "Gizelle." Not to be confused with the Gizelle from Enchanted. Completely different story.
Marina is such a beautiful girl, and an especially beautiful ballerina.


After the show, multiple strangers approached her and told her how beautiful of a dancer she was, and how prominent her stage presence is. This girl is going places. :)


Not only is she absolutely beautiful in appearance, but she is an incredible girl personality wise. Marina is not afraid to be who she is, ans she is one goofy girl!

Enough bragging about my sisterhood! This is starting to sound like an infomercial! 


Kirsten and I went shopping! And we looked cute!


And Kirsten was my favorite, cause she bought us matching sun glasses!


That's right, my friends, we rock shades. Indoors.... Ok, so the secret is out. I'm a terrible driver, and my license was suspended for a month, so Kirsten and I walked to the mall. Then to her house. Then back to my house (so we needed shades...). Then I ran to the light-rail station to catch a train to work this morning...
License suspension: BAD
Running and walking a ton: GOOD.
I'm gonna be so in shape by the end of this month!

Hey guys! I'm getting back into working out! It's called.... Brother lifting! :P I was feeling pretty buff, so I made my sister take a picture. 
(I love my family!!!!!)

Really, though, I am getting back on track with working out. I rain 2 miles this morning. Which felt like death, but I'll be so on top of it in a couple weeks!

2 years, 6 homes, and 5 jobs later...

So much can change in 2 years. In June of 2010, I was living in California at my dad's house, moping in depression, and planning on attending college for photography.

2 years later, I'm living in Salt Lake, on my own, I've just finished my first year of college studying Social Work, and I couldn't be happier. [You can tell I'm super educated, cause I use run on sentences. ;) ] I've been through 5 jobs, and I've moved 6 times. 

When I think back on the amount of changes that can, and have, happened in the past years, it almost frightens me. I'm only 19 years old. How many more dramatic changes are going to take place in the next two years? I guess only time will tell.

Word to the wise: If you're going to shake your Naked smoothie, make sure that the cap is on. Otherwise you get laughed at by all of your fabulously kind co-workers.







Also, when a mean killer wasp flies into your car and lands on your back window, he is probably trying to kill you, so it is best to run screaming from your car and sit on the lawn til it flies away. :)






My knee is feeling much better, I never did go to an Urgent Care. I should be back to running next week. WOO!
Because of my knee problem, the stairs were slightly difficult to navigate, so my laundry will be finished, and my closet organized by (hopefully) tomorrow evening.

I went to Lovely Nails yesterday and got my toes done. 
I love this place! I got my toes done and my eyebrows waxed for $34!!!



I have never had my eyebrows waxed before, but I tried it yesterday, and holy cow!
I thought my eyebrows were hopeless, but now they're beautiful. I think I'm gonna start getting my legs waxed, too! (Shaving is a pain!)


I'm laying in bed right now, simultaneously writing and watching
Make it or Break it


I'm finding it kind of difficult to get comfortable. Or move. =P
While david and I were hiking today, I fell and bashed my knee on a rock. It hurts so bad!
If it's any worse tomorrow morning, I'm going to head into Urgent Care.


I'll keep you posted on my knee situation, and I'll also share my closet organizing secrets ASAP.
(After all, I need some motivation to get my laundry done. *cue sheepish grin*)

I'm off to bed!
